1/2 cup premium sour cream (thicker than the regular)
3 tbsp mayo
1 tbsp mint leaves, chopped
juice 1/2 lime
3 tbsp unsalted butter
3 cloves garlic, minced
1 lime, chopped
2 x 300g pkg shrimp, peeled, deveined & butterflied
1 tsp pepper
1 cup ea shredded red & green cabbage
tortilla or taco shells
Saute for a few minutes longer - just until shrimp turns pink and curls. Add the lime chunks, stir and remove from heat.
Serve with lime wedges for squirting!
Delicious, easy and something the whole family will eat without complaint.
